Have you ever had a major Pinterest fail? Well, I did when I discovered “2 ingredient” pumpkin oatmeal cookies. I’m sure you could guess the two ingredients on your own. The result was blah blah yuck. Being the pumpkin fiend I am, I could not take a loss on a can of pumpkin. Canned gold. I decided to doctor them up and the results were delicious.
The cookies could be even great for breakfast if you substitute the chocolate chips for raisins.
- 1 can pumpkin
- 1 1/2 cup oats (I used quick oats)
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 tbsp pumpkin pie spice
- pinch salt
- 1/2 cup chocolate chips (or raisins if you want to be a goodie goodie and not naughty naughty)
2. In a large bowl combine pumpkin and oats
6. Roll mixture into balls and place onto your baking sheet
8. Let cool
